Härth Reopens with Upgraded Kitchen at Hilton McLean Tyson's Corner

The eatery now has an enhanced kitchen to bring diners more farm-to-table options from Executive Chef Thomas Elder's contemporary American comfort menu for breakfast, lunch and dinner.

The cozy fireside restaurant härth has reopened at Hilton McLean Tyson's Corner.

The eatery now has an enhanced kitchen to bring diners more farm-to-table options from Executive Chef Thomas Elder’s contemporary American comfort menu for breakfast, lunch and dinner. Look for a new spring menu coming later this month.

The changes at the restaurant include a streamlined redesign of the entire kitchen, adding more room to the prep lines with added Montague ranges and ovens. The pastry kitchen now boasts additional refrigeration along with a state-of-the-art gelato machine that will churn out a variety of flavors year round.

Committed to providing delicious, high quality cuisine, Elder’s seasonal menus showcase the best ingredients from local purveyors including Eco Farms in Lanham, Md., Parker Farms in Oak Grove, Va., and C & E Farms in Cheriton, Va. During spring and summer months, Elder hyper-locally sources a variety of produce and honey from his terrace level garden and rooftop apiary. 

Elder said of his garden: “This year I am experimenting with a lot of new herbs and vegetables. I am planting 12 varieties of mint that should be ready to harvest by June. We will use those in the kitchen and quite a bit at the bar.

“I am also growing some new varieties of peppers and chilies," he said. "The ghost peppers are one of the hottest in the world and they grow perfectly right here in Virginia. I add them to ketchup to give it a kick and I started making candies with our crop from last year.”   

Elder takes full advantage of the kitchen’s wood-burning copper clad oven with a number of smoked and fire roasted dishes for dinner. The succulent pork chop is smoked to perfection and complemented by sweet, roasted butternut squash.  Chef’s signature fire roasted half chicken is back, served over a zesty combination of mustard, a white wine reduction, sweet garden pepper jam and Brussels sprouts. Wood-fired flatbreads include the roasted mushroom, topped with caramelized onion, fontina cheese, and truffled sea salt.

At lunch, Elder offers a variety of hand-carved sandwiches, salads and main plates.  The popular härth burger excites taste buds with a house ground patty from Martin’s Angus Beef in The Plains, Va., Talbot reserve sharp cheddar, wood fired onions, and apple wood smoked bacon. For a lighter taste, diners can opt for the apple and pear salad, a satisfying blend of mixed greens, poached balsamic figs, candied walnuts, and blue cheese, gently tossed in apple cider vinaigrette. Bacon jam glazed salmon makes for a hearty entrée accompanied by cheddar grits and braised kale. Everyone can enjoy the same apple wood smoked bacon jam as it also accompanies the house-baked bread basket.

Elder’s inventive cuisine is served from an open kitchen in a warm, inviting dining room amidst three stone fireplaces. The 120-seat room is calming with hues of eggplant, cream and celery green, and features warm woods, cool custom chandeliers and artisan works of art. A semi-private space is available to accommodate groups of 20 comfortably. Valet parking is complimentary.   

  • Breakfast is served daily from 6:30-11 a.m. 
  • Lunch is available Monday through Friday from 11:30 a.m.-2 p.m. 
  • Dinner is available Monday through Saturday from 5-10 p.m.
